The word “omakase” literally translates to “I’ll leave it to you,’ so it’s up to the chef to serve a series of plates depending on the available ingredients. You won’t know what you’ll be eating going in, so every dish will be a surprise.

Takayama

The first thing you have to know about Takayama is that it pays homage to the culture and cuisine in Osaka, which was considered “the kitchen of the world” back in the Edo period.

As the executive chef, Taro Takayama is at the helm of the menu, using mainly seasonal ingredients to highlight Japanese cuisines to outsiders. He’s worked at three Michelin-starred restaurants in Japan and was appointed as resident chef at the residence of the Japanese Ambassador to Singapore.

Some of the dishes you might get to taste here are foie gras monaka with yuzu and wagyu beef with Japanese chilli and eggplant. It had a Spring menu for a time, which was a 9-course dinner with fish fresh from Japan, unagi foie gras, and spring vegetables.

Masaaki

There are quite a few good sushi omakase restaurants in Singapore, but nothing comes close to how heavenly each dish at Masaaki is.

Kyoto-raised chef Masaaki Sakashita, along with his team, has crafted a mouthwatering menu that incorporates traditional Japanese cooking techniques and fresh ingredients air-flown directly from Japan.

For a more immersive omakase experience, sit at the counter to see their talented chefs in action in the open kitchen. You’ll feast your eyes on crabs getting thrown into the flames and raw fish getting sliced into thin pieces.

Shoukouwa

Shoukouwa is among the two Michelin-starred omakase sushi restaurants in Singapore, but what makes it stand out is its fresh ingredients sourced directly from Tokyo’s Toyosu Market. It’s the place to go if you want to experience authentic Edo-style sushi.

With only eight seats at the counter, expect to have an intimate and once-in-a-lifetime dining experience at Shoukouwa. Each sushi dish is perfectly crafted using the highest quality of fish served at the perfect temperature.

Prepare your wallets, though, as Shoukouwa is one of the most expensive omakase restaurants in Singapore, charging as much as $320++ per person for a six-course meal.

Ashino

Opened in 2015, Ashino is another eight-seater sushi omakase restaurant in Singapore that serves authentic Edomae sushi. Its menu is significantly cheaper than Shoukouwa, starting at around $180 for a sushi set.

Ashino is led by Chef Taku Ashino, a sushi chef with more than a decade of training in Japan. He creates a unique and memorable omakase experience by using a wide variety of fresh, house-aged fish, flown directly from a specific artisan at Toyosu Market.

We strongly recommend dropping by here at night to experience its dinner omakase, which includes seven appetisers, miso soup, fruits, ice cream, and 13 pieces of sushi.
